Swiss Steak

6 Tablespoons flour
2 teaspoons salt
1/4 teaspoon pepper
2 pound round steak, cut 1-inch thick
4 medium onions
6 Tablespoons shortening
1/2 cup chopped celery (about 2 stalks)
1 clove garlic, minced
3/4 cup chili sauce
3/4 cup water
1 green pepper (optional)

Combine flour, salt and pepper; rub into both sides of steaks or pound in with meat mallet. Cut into 8 portions. Peel and slice onions; brown lightly in 1 Tablespoon of shortening. Remove from skillet. Add remaining shortening.

Brown steak on both sides. Reduce heat. Add celery, garlic, chili sauce and water. Cover simmer 1 hour. Cut green pepper into slices. Add pepper and onion to meat. Continue cooking 30 minutes or until meat is tender. * I put mine into a baking pan or skillet, cover with foil and bake at 350 degrees for 2 to 2-1/2 hours for meat that's more tender. Makes 8 servings.
