Date Pinwheel Cookies

1 cup white sugar
1 cup brown sugar
1 cup shortening
3 eggs. beaten
4 cups sifted flour
1 teaspoon soda
1/2 teaspoon salt
1 teaspoon vanilla

Cream sugars and shortening, add eggs. Sift dry ingredients and add to sugar mixture with vanilla. Roll dough until 1/2 inch thick. Spread with date filling (recipe below).

Date Filling:
1 pound dates (chopped)
1/2 cup sugar
1 cup water

Assembly:
Once you've spread on the cooled date filling roll up dough and filling in a jellyroll fashion, starting with the longest edge. Once rolled, place this roll in the freezer for a few hours or for however long you have until you want to bake them. Remove the roll from the freezer and slice the roll (about an 1/8 of an inch). Place these slices (about a dozen per cookie sheet) on cookie sheets and bake them in a preheated 375 degree oven for 12-15 minutes.
