Skinny Spinach Bow Tie Pasta (Vegetarian)

1-6 ounce bow tie pasta
1-10 ounce frozen chopped spinach
1 teaspoon olive oil
1 large onion (1 cup)
1-14 ounce Italian style stewed tomatoes
1-15 ounce can tomato sauce
2 teaspoons minced fresh garlic
1 teaspoon dried Italian seasoning
1-12 ounce container reduced fat cottage cheese
Pepper to taste
6 Tablespoons Parmesan cheese

Cook pasta. Thaw spinach and rinse and squeeze dry. Cook onion in the olive oil until soft. Add tomatoes, sauce, garlic, and seasonings. Cook tomato mixture for 5 minutes over medium heat. Stir drained and squeezed spinach into tomato mixture; add cottage cheese. Cook 2 minutes, until warm throughout. Put noodles in bowl and pour sauce in middle; sprinkle with Parmesan cheese.
