Fruit Pizza

1 package Pillsbury sugar cookie dough, frozen
8 ounce package of cream cheese, softened
1/2 cup sugar
1 teaspoon vanilla
1 small jar fruit preserves (peach or apricot)
2 Tablespoons water

Freeze cookie dough for 1 hour. Preheat oven to 375 degrees. Cut cookie dough into 1/8 inch slices. Arrange slices (slightly overlapping) on a pizza pan - including the sides of the pan. Bake 10-12 minutes, until light brown. Cool. Combine cream cheese, sugar, and vanilla. Spread on cooled crust almost to the edges (like sauce on pizza dough). Arrange various fruits in a circular fashion.

Suggestion: Working from the outside in 1.) blueberries, 2.) strawberries (halved), 3.) kiwi fruit, 4.) bananas (sliced), and 5.) green grapes. Mix a jar of fruit preserves and the 2 Tablespoons of water together. Drizzle most of the preserves over the fruit.

* Remember if using bananas, dip them in lemon juice first to prevent browning.
