Lentil Barbeque (Vegetarian)

1 cup dried lentils, rinsed and drained

4 cups of water


1 teaspoon of oil
1/2 cup of chopped onion
1 Tablespoon vinegar
2 Tablespoons brown sugar
4 teaspoons lemon juice
1/2 cup catsup
1/2 cup water
1/2 teaspoon prepared mustard

Add the lentils and water to a pot. Bring the pot to a boil, reduce heat to a very low simmer, cover the pot with a lid and cook for 20-30 minutes or until tender but not mushy. Drain the lentils and set aside. Brown chopped onion in oil until onions are cooked. Add lentils to onions cooking until warm. Add the rest of the ingredients and stir barbeque every 15 minutes to incorporate sauce. Simmer uncovered for at least one hour. Serve lentil barbeque on hamburger buns with hamburger pickles.Â
