Rice Pudding

1 cup rice (washed well)
2 cups water
salt
1 stick cinnamon (optional)
3 eggs
3/4 - 1 cup sugar
3/4 cup milk
1 teaspoon vanilla

Prepare rice according to package directions (first 4 ingredients). Remove cinnamon stick. Beat eggs, sugar, milk, and vanilla. Mix rice into custard and pour into a greased casserole dish. Place casserole dish in water while baking. Bake at 350 degrees for 20 minutes. Stir in raisins, if desired. Sprinkle custard with cinnamon and nutmeg. Continue baking until custard is set, about 30 more minutes or until dinner knife comes out clean.
